The style of Bruno Ruiz is born from roots, from the product, and from a very free way of understanding cuisine.

After years of apprenticeship in some of the country’s most renowned kitchens, alongside figures such as the Roca brothers, Martín Berasategui, or Pedro Subijana, Bruno has built his own identity where technique coexists with intuition, memory, and the territory.

Although hints and nuances of other world cuisines appear in his dishes, his essence remains deeply linked to Valencia and “la terreta.” To local products, to the terrace fields, and to that cuisine that finds value in the authentic and in traditional ingredients.

In his dishes, technique, creativity, and contrasting textures coexist, always at the service of the flavor and the emotion he wishes to convey in every preparation.

Creations such as his Gamba Bajo Cero (Below Zero Prawn), winner of the Dénia Red Prawn International Contest in 2018; his liquid eel all i pebre croquette, or his reinterpretations of vegetable products reflect a cuisine capable of transforming simple ingredients into intentional gastronomic experiences.

Because beyond technique, there is something that defines Bruno Ruiz’s cuisine: the ability to evoke emotion through simplicity.
